Chocolate Covered Pumpkin Oat Bars

For The Pumpkin Oat Bars
- 3/4 Cup chunky peanut butter
- 2 cups old fashion rolled oats
- 1/3 cup pumpkin purée
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
For The Chocolate Topping
- 1/2 cup chocolate chips vegan
- 1 tbsp vegan butter
- 1/2 tsp vanilla extract
For The Bars
Put oats, honey or maple syrup, pumpkin purée, peanut butter, vanilla, salt, and pumpkin spice seasoning in a medium bowl and stir well with a wooden spoon.
Line a loaf pan with parchment paper. Press oat mixture into lined loaf pan.
