OatmealPeanut Butter Cookies

These Oatmeal Peanut Butter cookies are so soft and buttery! The outside is chewy from the oats with a hint of peanut butter! These are a crowd pleaser!

Ingredients
  

  • 1/2 cup butter (vegan optional) room temp
  • 1/2 cup crunchy peanut butter
  • 1 egg
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3/4 cup gluten free flour blend or all purpose flour
  • 3/4 tsp baking soda
  • 1 ¼ cups old fashion oats

Instructions
 

  • Preheat oven to 350°
  • Line a baking sheet with parchment paper.
  • Blend butter, sugars, salt, egg, and peanut butter until smooth. Add flour blend, oats, and baking powder. Stir well without overmixing. Bake 10-12 minutes or until still soft in the middle and light brown on edges. Let cool all the way if you take them out while still soft in the center.
