Jam Filled Cookies
These are delicate, buttery, and just sweet enough with a jam center!

- ¾ cup Butter or a dairy free "butter" I use Earth Balance
- ½ cup Powdered Sugar
- 2 Egg yolks
- 1 tsp Vanilla extract or almond extract
- 1½ cups Gluten free flour blend check out my easy gluten free flour blend!
- 1 cup Jam of your choice
Preheat the oven to 325°
In a medium sized bowl cream butter with an electric mixer. Add sugar and mix. Add egg yolks and extract. Beat at medium speed till fluffy. Add flour and blend slowly.
Form dough into disc wrapped in plastic wrap and refrigerate for 1 hour.
Lightly flour parchment paper and roll the dough with rolling pin to about ¼ in thick. using a biscuit cutter or a glass cut out little discs about 3 inches round. Place on a parchment lined baking sheet about 1 inch apart. Put about a teaspoon of jam in the center of half of the discs you cut out. Top with the other half. With a fork gently press the edges together to make a cute design. Bake for about 15 minutes or untill edges start to brown.
Cool on wire rack then enjoy!
