Oat Carrot & Apple Bars

These Oat Carrot & Apple Bars are full of nutritious ingredients that taste delicious! Gluten and dairy free, but can easily be made with regular flour and dairy! Use an egg sub and it's vegan!

Ingredients
  

  • 1 ¾ cups Old Fashion Oats Gluten Free
  • 1 ½ cups Gluten Free Flour Blend I recommend my recipe!
  • ¼ cup Ground Flaxseed
  • 1 tbsp Baking Soda
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • 2 tsp Ground Cinnamon
  • 1 ¼ cups Brown Sugar Packed
  • cups Avocado Oil
  • 1 tsp Vanilla Extract
  • 2 lg Eggs
  • 1 ½ cups Buttermilk homemade dairy free
  • 1 ½ cups Grated Peeled Carrots
  • 1 cup Grated Peeled Apple

Topping

  • 1 ½ cups Chopped nuts of Choice
  • ½ cup Shredded Unsweetened Coconut
  • ¼ cup Brown Sugar Lightly Packed
  • 1 tsp Ground Cinnamon

Instructions
 

  • Preheat oven to 350°
    Butter or oil a 13 by 9 inch baking pan.
    Mix up your homemade buttermilk if using dairy free. (Measure out dairy free milk of choice and add a tablespoon of apple cider vinegar to every one cup of milk. Stir and set aside.)
  • In a large bowl whisk together eggs, oil, vanilla, and brown sugar.
    Stir in buttermilk,
  • Add oats, sifted flour, baking soda, baking powder, salt, ground flaxseeds, and cinnamon to the egg mixture. Stir, but do not over mix.
  • Stir in carrots and apples without over mixing.
    Pour batter into greased baking dish.

Make The Topping

  • In a small bowl stir chopped nuts, coconut, sugar, and cinnamon and sprinkle over the batter in baking dish.
    Bake in the oven for 45-55 minutes.
    Cool before cutting.
