Most Delicious Chocolate Cake

This is the most delicious chocolate cake! It is moist and tender without being heavy and the frosting is smooth and creamy.

Ingredients
  

  • 2 cups gluten free flour blend
  • 2 cups sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup vegan butter, dairy free butter or butter
  • cup unsweetened cocoa powder
  • 2 eggs
  • ½ cup dairy free buttermilk, I use homemade DF
  • tsp pure vanilla extract

Chocolate frosting

  • ¼ cup vegan butter, margarine, or real butter
  • 3 tbsp cocoa powder
  • 3 tbsp dairy free buttermilk
  • cups sifted powdered sugar
  • ½ tsp pure vanilla extract

Instructions
 

  • Preheat oven to 350° and grease and line bottoms of baking pans and line with parchment paper and grease again. I use two 8" circle cake pans.
  • In a medium bowl stir together flour, sugar, baking soda, and salt. Set aside.
  • In a medium saucepan combine butter, cocoa powder, and 1 cup water. Bring mixture just to a boil and stir constantly. Remove from heat. Add the melted cocoa mixture to the flour mixture and beat on medium speed until thoroughly combined. Add eggs, buttermilk and vanilla and mix well.
  • Pour batter into prepared pans and bake for about 25-35 minutes.
  • Once cakes have cooled for about 10 minutes remove from pans and let cool another 10-15 minutes. Level cake accordingly and frost.

Frosting

  • In a medium saucepan combine the butter, cocoa powder, and buttermilk. Bring to a boil and remove from heat. add in the powdered sugar and vanilla. Beat until smooth.
  • This frosting does best when applied to cake while still warm. It gives a shiny gleam!
