Blackberry Cobbler
A summertime favorite! Blackberry Cobbler is always a win! So delcious made gluten and dairy free or traditional.
Filling
- 6 cups blackberries
- 1/4 cup sugar
- 1 tbs lemon juice
- 3 tbs gluten free flour blend or all purpose flour
Topping
- 2/3 cup sugar
- 3/4 cup gluten free flour blend or all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 tsp vanilla extract
- 6 tbp vegan butter or butter
For the filling
Pre heat the oven to 350° Butter a 8x8 baking dish.
In a large bowl stir the berries with lemon juice, sugar, and flour. Pour into buttered baking dish.
Topping
In a medium bowl combine sugar, flour, salt, and baking powder. Cut in butter and vanilla extract. When the dough clumps together top it on the berries. Bake for aboout 35 minutes or until lightly browned topping and bubbly.
