Blackberry Cobbler

There is no sweeter memory of summer as a child than Blackberry Cobbler! It was one of my families favorites! Instead of birthday cakes it was requested from my grandmother and mother. We all loved it and looked forward to all the family get togethers and fresh blackberry cobbler with or without vanilla ice cream!

This isn’t my families recipe, although I’m on a mission to find my grandmas recipe, this one is still very tasty!

I did convert this traditional blackberry cobbler recipe into a vegan and gluten free recipe! It is so good though! Nobody will know the difference!

Blackberry Cobbler

A summertime favorite! Blackberry Cobbler is always a win! So delcious made gluten and dairy free or traditional.

Ingredients
  

Filling

  • 6 cups blackberries
  • 1/4 cup sugar
  • 1 tbs lemon juice
  • 3 tbs gluten free flour blend or all purpose flour

Topping

  • 2/3 cup sugar
  • 3/4 cup gluten free flour blend or all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 tsp vanilla extract
  • 6 tbp vegan butter or butter

Instructions
 

For the filling

  • Pre heat the oven to 350° Butter a 8×8 baking dish.
  • In a large bowl stir the berries with lemon juice, sugar, and flour. Pour into buttered baking dish.

Topping

  • In a medium bowl combine sugar, flour, salt, and baking powder. Cut in butter and vanilla extract. When the dough clumps together top it on the berries. Bake for aboout 35 minutes or until lightly browned topping and bubbly.
