Southern Peach Cobbler
This classic peach cobbler tatses like summer and fall goodness to me! It can be made gluten free and vegan, how I make it, or with traditional butter and flour. Either way its sure to please everyone.
Filling
- 8 cups fresh sliced or cubed peaches I leave skins on
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp fresh lemon juice
- 2 tsp cornstarch
Topping
- 1 cup gluten free flour blend or all purpose flour
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 6 tbsp cubed cold vegan butter or real butter
- 1/2 cup boiling water if using all purpose flour use 1/3 cup boiling wtaer
Cinnamon Sugar Topping
- 3 tbsp sugar
- 1 tsp cinnamon
Pregeat oven to 425°Butter a 9 x 13 baking dish or close to that size.
For The Filling
In a large bowl gently stir the peaches with sugars, cornstarch, cinnamon, nutmeg, and lemon juice. Then pour coated peaches in baking dish. Bake in preheated oven for 10 minutes while preparing topping.
For Topping
In a medium sized bowl stir flour, sugars, salt, and baking powder. Cut in cubed butter until it resembles coarse meal. Add in boiling wtaer and stir. Do not over mix. Dollop topping over the peaches. Sprinkle the entire cobbler with cinnamon sugar and bake about 30 minutes.
