Fluffy Gluten and Dairy Free Waffles

These fluffy gluten and dairy free waffles are a family staple! They are delicious and nobody can tell they're gluten and dairy free!
Servings 12 waffles

Ingredients
  

  • 1 ¾ cup gluten free flour blend or all purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 2 eggs
  • 1 ¾ cup dairy free milk or regular milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • ½ cup avocado oil or other light oil or melted butter
  • ¼ tsp salt

Pumpkin Spice Waffles

  • 2/3 cup Pumpkin purée
  • 1 tbsp Pumpkin pie spice seasoning

Instructions
 

  • Heat waffle iron according to instructions.
    In a large bowl sift together flour, sugar, baking powder, and salt. Set aside.
  • In a medium sized bowl stir the eggs, oil, milk, apple cider vinegar, and vanilla.
    Once that is stirred well pour it all into the flour mixture and stir until combined. Be sure not to over mix!
  • Laddle into your oiled waffle iron! Serve as desired.
  • If you’re making the pumpkin spice waffles stir in the pumpkin purée and seasoning after flour is mixed in. Do not over mix.
