Fluffy Gluten & Dairy Free Waffles!

These fluffy gluten and dairy free waffles are perfect for a special breakfast or brunch! My family loves homemade waffles! Being we are gluten and dairy free I tweaked an old waffle recipe I loved and came up with this delicious fluffy waffle recipe!

This is just one of this good home cooking staples! Which can be hard to find if you are gluten free and dairy free! If you are not gluten and dairy free you can simply replace the flour and milk with all purpose flour and dairy milk!

Fluffy gluten and dairy free waffles!

I highly recommend my gluten free flour blend! It is super easy and quick! I have come up with this because it produces the best texture and it’s so simple! It’s not like mixes with 3-5 flours! Nobody has time for that! Especially a busy mom cooking for her family! Quick, simple, great taste and texture are key!! You can find that quick recipe here!

We are a family of six so I typically double this recipe and sometimes triple it! Yep, we are big eaters! Especially breakfast! Kids always love breakfast foods right! My husband does as well! Plus, if you have some extra they make such a quick and delicious leftover breakfast the next day!

Make Them Pumpkin Spice Waffles!

If it’s the fall season and you want a festive breakfast you must make these!!! If you ask me this pumpkin spice waffle recipe blows a pumpkin spice latte out of the water! For the pumpkin spice addition you simply add a tablespoon of pumpkin spice and 2/3 cup real puréed pumpkin!

Meal Prep With These Waffles!

These freeze great! If you meal prep for your family this is so easy to whip up 2 or 3 batches or even one batch if you have a small family. Freeze them first on a cookie sheet not touching each other . Once frozen all the way through you can place in a ziplock together or my personal favorite a reusable freezer safe container! They stay good up to 3 months!

Drizzle these with your favorite syrup or toppings and dig in!

Here are some freezer safe containers for meal prepping or just freezing your leftovers! My personal favorites are the glass containers! I kinda hate plastic! It’s sorta taking over our planet even when w try and recycle it’s still a problem, but that’s another post! lol Either way all these containers are better than using plastic ziplock bags and will small you money in the long run!

A little secret ingredient in the waffles is apple cider vinegar! It helps tenderize the batter and creates a great texture for gluten free quick breads!

Fluffy Gluten and Dairy Free Waffles

These fluffy gluten and dairy free waffles are a family staple! They are delicious and nobody can tell they're gluten and dairy free!
Servings 12 waffles

Ingredients
  

  • 1 ¾ cup gluten free flour blend or all purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 2 eggs
  • 1 ¾ cup dairy free milk or regular milk
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • ½ cup avocado oil or other light oil or melted butter
  • ¼ tsp salt

Pumpkin Spice Waffles

  • 2/3 cup Pumpkin purée
  • 1 tbsp Pumpkin pie spice seasoning

Instructions
 

  • Heat waffle iron according to instructions.
    In a large bowl sift together flour, sugar, baking powder, and salt. Set aside.
  • In a medium sized bowl stir the eggs, oil, milk, apple cider vinegar, and vanilla.
    Once that is stirred well pour it all into the flour mixture and stir until combined. Be sure not to over mix!
  • Laddle into your oiled waffle iron! Serve as desired.
  • If you’re making the pumpkin spice waffles stir in the pumpkin purée and seasoning after flour is mixed in. Do not over mix.
