Healthy Chocolate Chip Muffins

My whole family loves these and the best part is they are free from refined sugars!

I love to bake and I must admit that most of my baked recipes are full of sugar! Knowing they are gluten and dairy free are my priorities, but I’m trying to figure in less sugar these days!

So, this recipe has a secret ingredient! It’s actually a very common ingredient these days…

Dates! Puréed dates with hot water! It makes a smooth jell once it sits for a minute.

I sprinkle ground flaxseed on the top of these and my kids think it’s something sweet and devour them! Haha

These healthy chocolate chip muffins are a great muffin option and satisfying. These aren’t trying to implement a decedent dessert type of muffin. That being said they are delicious and my kids love them!

Pack these in lunches or for an on the go snack. I do eat mine for dessert and anytime!

I get 15 muffins every time I make them!

These are a great pick me up for kids after school. It will give them energy without the crash until dinner!

Ok, so my favorite way to eat these muffins is after letting them cool completely. This makes the chocolate chips crunchy.

I have tried several friends baked goods that “use my recipe,” but didn’t use my flour blend and it just does not come out as good.

For The Chocolate Chips…

Also, I have used Enjoy Life mini chocolate chips in this recipe. It works great and tastes great. The only thing is you do have refined sugar from the chocolate chips, but if you’re okay with that use any chocolate chips you want!

Another good option could be a dark chocolate chip that doesn’t contain a lot of sugar.

I was really surprised to find these refined sugar free chocolate chips! At my local natural food store!

Healthy Chocolate Chip Muffins

These healthy chocolate chip muffins are a delicious snack that the whole family will love. Free from refined sugar, gluten , and dairy!

Cook Time 25 minutes
Course Breakfast, Dessert, Healthy, Snack

Ingredients
  

  • 3/4 cup dates
  • 3/4 cup hot water
  • 1/2 cup coconut sugar
  • 1/2 cup Earth Balance melted
  • 1 1/2 cups dairy free buttermilk
  • 1 1/4 cups Chocolate chips
  • 2 Lg egg whites
  • 2 Tbsp pure vanilla extract
  • 4 cups Gluten free flour blend
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup ground flaxseed

Instructions
 

  • First whisk together dry ingredients in a medium size bowl. Set aside.
  • Mix together your choice of dairy free milk with a tablespoon of apple cider vinegar to make your buttermilk. Set aside.
  • Next, put dates and hot water in a blender or food processor and blend until smooth.
  • In a large bowl mix egg whites, melted earth balance, coconut sugar, dairy free buttermilk, date purée, and vanilla extract.
    Now, stir in the flour mixture just until mixed. Stir in chocolate chips.
    Scop 1/4 cup spoonfuls of batter into a lined muffin tin. Sprinkle tops with ground flaxseed before baking.
    Bake in a 350 degree oven for 20-25 minutes.

Notes

For the easiest gluten free flour blend use my link above. 
I make my own dairy free buttermilk by using almond milk or coconut milk, whichever I have on hand, then stirring in a tablespoon of apple cider vinegar.
