Pumpkin Spice Oatmeal

Yes, you could add a little pumpkin spice to your regular oatmeal and call it good, but this adds more nutrients and flavor then that. This will start your day or your kids day with the bright orange goodness from real pumpkin and protein from peanut butter and oats!

I use old fashion oats in the because I like less processed food! I also use gluten free oats because my family doesn’t eat gluten.

I started making this long before the “Pumpkin Spice Latte” trend! I first made this oatmeal when my oldest daughter was one. It was her first fall that she was aware of and I was always looking for ways to make everything she ate as nutrient packed as possible! She is now 13 and still loves it when I make this during the fall season!

This oatmeal gives my home the warm cozy feeling and smell of fall in the morning! We all love it. It’s a staple breakfast in the fall around here!

This comes together so quick and easy, yet it fuels your body longer than regular oatmeal because of all the added ingredients! Perfect for those cool fall mornings when your kids need a quick but healthful breakfast before school!

Pumpkin Spice Oatmeal

This oatmeal is so yummy and festive! Not only does it taste delicious, but it's nutrient packed to get your day started right!

Ingredients
  

  • 2 Cups Old fashion oats I use Gluten Free
  • 2 Cups Almond milk
  • 1/2 Cup Pumpkin puree
  • 1/3 Cup Brown sugar
  • 2-3 Tbsp Peanut butter depending on your liking
  • 1/2 tsp Pumpkin pie spice
  • 1 tsp Vanilla extract
  • Pur Maple syrup for drizzling on the top

Instructions
 

  • In a saucepan add oats, milk, sugar, pumpkin, and spice. bring to a simmer and cook for about 4-5 minutes stirring often. Reduce heat to low and stir in the peanut butter and vanilla extract. Cook for one more minute then remove from heat. Serve with mape syrup drizzled over the top and additional almond milk!
