Vegan Vanilla Caramel Popsicles Dipped in Chocolate

Yay! A vegan vanilla caramel popsicle dipped in chocolate!! The great thing is, this gives you a break from everything tasting like coconut! It actually doesn’t not taste like coconut! When you don’t eat dairy sometimes you end up eating a lot of coconut in place of dairy. This recipe is not one of those! Don’t get me wrong, I love coconut, but it can end up in everything creamy you make! My kids are the ones that get sick of coconut!

These popsicles are so fun to make! You can get so creative on how to make them!

My kids love helping make popsicles! Especially my seven year old daughter! It’s definitely her thing! My son just can’t wait until they’re ready to be eaten! Lol

To make these delicious vegan popsicles you need to have caramel! I make the most delicious vegan date caramel to fill these popsicles with! If you wanted to, you could buy the caramel to make it quick and easy! This date caramel though is worth making!

Making The Popsicles

The first step to making these popsicles is making the vegan date caramel! It is so amazing and delicious! You have to be careful not to just eat it all before you use it! All you need to do for the day caramel is put dates, maple syrup, vegan butter, vegan milk, salt, and vanilla into a food processor or blend and puree to a smooth consistency! That’s it, so easy!

Delicious Vegan Date Caramel!!

Next, you mix the yogurt, sugar, honey, vanilla extract, and salt in a bowl. Then fill your popsicle molds halfway full or a little less then halfway. Stick them in the freezer for about an hour or longer. Take them out and fill with about two tablespoons of caramel being sure to push down the caramel all the way onto of the vanilla ice cream. Sprinkle with chocolate chips and freeze again for about 20-30 minutes. Take out the popsicles and fill the remainder of the molds all the way with the vanilla yogurt ice cream. Freeze for about 2-3 hours.

Finally, take out the popsicles from the molds. I do this by running warm water over the popsicle molds then sliding them out carefully. Place on a lined parchment baking sheet. Freeze for an additional 20 minutes.

Meanwhile, melt the chocolate chips in a mug. After the popsicles are nice and frozen dip them quickly into the melted chocolate. Return them to the parchment lined baking sheet and stick back in the freezer. Once the chocolate is hardened they’re ready to eat!

Vegan Vanilla Caramel Popsicle Dipped in Chocolate

These popsicles are so refreshing and delicious! They're vegan and soo tasty! Customize them to your taste!
Course Dessert, Snack
Servings 9 popsicles

Equipment

  • Popsicle mold

Ingredients
  

  • 4 cups plain vegan yogurt
  • 2/3 cup sugar
  • 1/4 cup maple syrup
  • 2 tbsp vanilla extract

Vegan Date Caramel

  • 1 cup dates
  • 1/3 cup melted vegan butter
  • 1/4 cup maple syrup
  • 4-5 tbsp vegan milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Chocolate Chips and Chocolate Dip

  • 1 1/2 cups chocolate chips for melting
  • 1/2 cup chocolate chips to sprinkle in the middle of popsicles

Instructions
 

  • Stir all ingredients in a bowl and fill the popsicle molds halfway full. Stick them into freezer for about 20-30 minutes.
  • Meanwhile, make the date caramel.
  • Put about 2 tablespoons of date caramel in the popsicle mold. Sprinkle with a few chocolate chips if you like! Be sure to push down the caramel all the way down to the vanilla yogurt ice cream. Put the popsicle sticks into the mold at this point as well. Then, freeze for about 20 minutes. Fill the remainder of the popsicle mold with the vanilla yogurt. Freeze again for 3-4 hours.
  • Next, you can remove the popsicles from the mold by running warm water over them. Gently slide them out and place on a parchment lined baking sheet. Place back into freezer for 20 minutes.
  • Meanwhile, melt chocolate chips in a mug.
  • Remove popsicles from freezer and quickly dip into melted chocolare. Return to freezer until set.
