These are a favorite in our house! We also call them breakfast bars because they are full of nutritious ingredients, that makes them a great breakfast! Also, perfect with a cup of coffee anytime of the day! My kids can eat this for dessert or a snack and I feel good about it!
These are gluten and dairy free of course like all of my recipes! If you want to replace the gluten flour, you can easily sub in regular all purpose flour and it will come out great! Same goes for the milk!
Oat carrot and apple bars are a great way to use up apples and carrots you might have! I always have a drawer full of carrots in my fridge!

I like to make these and keep them in the fridge for a quick snack or to pack in lunches! They are best in the first 3 days.
Putting It All Together…
First you’re going to mix the eggs, oil, vanilla extract, and brown sugar.
You can make your own dairy free buttermilk with the milk of your choice, I prefer whatever I have on hand that has the most fat, and add a splash of apple cider vinegar. Let that sit for a few minutes and its ready to go!
Add in the buttermilk to the egg mixture.
When baking gluten free you can’t just replace the flour in a regular recipe with any type of gluten free flour. I’ve seen this done all to often and it just doesn’t come out right. I have played around for years with gluten free flours and I have my go to easy recipe that I recommend for all of my recipes.
Here I just added the sifted gluten free flour, baking soda, baking powder, ground flaxseed, oats, cinnamon, and salt.
Once everything is dumped on top of the liquids I stir it in without over mixing it!
Here I added the grated carrots and apples. Stir it in without over mixing. Then pour into a generously buttered or oiled 13 by 9 inch dish.
Finally, in a small bowl you with mix the topping. Then sprinkle it on top of the oat carrot & apple batter just before you pop it in the oven.
Once it’s done baking try to let it cool for 20-30 minutes at least before cutting. They setup best once fully cooled although they are delicious either way!

Oat Carrot & Apple Bars
Ingredients
- 1 ¾ cups Old Fashion Oats Gluten Free
- 1 ½ cups Gluten Free Flour Blend I recommend my recipe!
- ¼ cup Ground Flaxseed
- 1 tbsp Baking Soda
- 1 tsp Baking Powder
- ¼ tsp Salt
- 2 tsp Ground Cinnamon
- 1 ¼ cups Brown Sugar Packed
- ⅔ cups Avocado Oil
- 1 tsp Vanilla Extract
- 2 lg Eggs
- 1 ½ cups Buttermilk homemade dairy free
- 1 ½ cups Grated Peeled Carrots
- 1 cup Grated Peeled Apple
Topping
- 1 ½ cups Chopped nuts of Choice
- ½ cup Shredded Unsweetened Coconut
- ¼ cup Brown Sugar Lightly Packed
- 1 tsp Ground Cinnamon
Instructions
- Preheat oven to 350°Butter or oil a 13 by 9 inch baking pan.Mix up your homemade buttermilk if using dairy free. (Measure out dairy free milk of choice and add a tablespoon of apple cider vinegar to every one cup of milk. Stir and set aside.)
- In a large bowl whisk together eggs, oil, vanilla, and brown sugar.Stir in buttermilk,
- Add oats, sifted flour, baking soda, baking powder, salt, ground flaxseeds, and cinnamon to the egg mixture. Stir, but do not over mix.
- Stir in carrots and apples without over mixing.Pour batter into greased baking dish.
Make The Topping
- In a small bowl stir chopped nuts, coconut, sugar, and cinnamon and sprinkle over the batter in baking dish.Bake in the oven for 45-55 minutes.Cool before cutting.
