We’ve all seen overnight oats a ton of different ways! I love them all, but here is a favorite of mine! Blackberry Coconut Overnight Night oats! It is gluten free and vegan and simple and delicious!
My family and I don’t make overnight oats the night before. We make them and eat them right after, maybe waiting 5-10 minutes! So if you aren’t the biggest overnight oat fan, maybe make them and eat them right away! It is less soggy and more like a chewy cereal! My kids actually refuse to eat them after sitting!
I prefer using old fashion oats because they stay chewy and hold up well. Plus, they’re better for you than quick cooking oats!
Being I am gluten free, we buy only gluten free oats. Here are some of my favors brands that we use.
What I love about this easy breakfast is that it’s quick to prep and makes mornings so easy! If you have kids your probably like me and are always looking for new ways to help your kids help themselves to an easy yet healthy breakfast! This one is a win for my kiddos!
Add In’s
There are so many ways to customize overnight oats and help the nutritional punch! Some can be mixed in ahead of time and others would be better as a topping! Here are some that we enjoy:

•ground flaxseed
•chocolate chips
•fruit
•nut or seed butter
•chopped nuts
•dried fruit
•dried coconut
•jam
•vanilla extract
•granola
Which Milk To Use?
I love coconut milk because of the creamier texture. My favorite is the the guar gum free “simple” canned coconut milk! It does have quite a bit more calories though, but such a yummy treat! If you are watching your caloric intake any vegan milk would be great! My kids prefer almond milk. Ive also seen recipes where they use yogurt in their overnight oats! Yum!

Fruit
For this recipe I used my frozen blackberries that I picked over the summer! Berries of any kind would be great fresh or frozen! Chopped fruit like apples and bananas are a great option too!
Blackberry Coconut Overnight Oats
Ingredients
- 1 cup old fashion oats *gluten free
- 1 cup coconut milk or vegan milk of choice *simple canned coconut milk for creamiest
- 1 tbsp shredded unsweetend coconut
- ¼ cup fresh or frozen blackberries
- ½ tbsp chia seeds
- ½ tsp vanilla extract
- ½ tbsp maple syrup
Instructions
- Mix all ingredients well in a mason jar or cup of choice. Top with additional chia seeds, shredded coconut, and blackberries. Cover and refrigerate or eat right away! Enjoy!
