If oatmeal is a staple in your house like it is in mine, you have to switch it up sometimes! This creamy coconut oatmeal is a nice change! It is creamy and filling. The shredded coconut adds more fiber so it really fills you up and keeps your hunger at bay longer!

Which Coconut Milk Is Best For You?
You can use the canned coconut milk for this recipe or the coconut milk in the carton. Either one will be delicious! Although the canned one might be more creamy!
I recently have been looking into the effects of guar gum which is in a lot of coconut products. It’s not that great of an ingredient. So I try to buy the coconut milks without guar gum! I have seen more canned brands that don”t contain this ingredient rather than the kinds in cartons.

Like all oatmeal this coconut oatmeal recipe comes together very quickly! That is probably why oatmeal is such a common breakfast around here!
I do use old fashion gluten free oats in this recipe. Although you can use any kind of oats you would like. I find in any recipe calling for oats of different sorts they can easily be replaced with any type! I find old fashion oats to be less processed as quick cooking oats, yet easy to do more with than steel cut oats!
This is such a simple recipe! All you do is throw this all in the saucepan and let it cook. Stirring often for about 8-10 minutes! I don’t know about you, but I love quick breakfasts that taste delicious and your family will love! This serves 3-4 depending on how much everyone eats!

Creamy Coconut oatmeal
Ingredients
- 2 cups coconut milk
- 1½ cups old fashion oats
- ¼ cup honey or maple syrup
- ¼ cup shredded coconut
- 5 drops liquid stevia
- 1 tsp vanilla extract
- ⅛ tsp pink himalayan salt
Instructions
- Place coconut milk, oats, honey, shredded coconut, and salt into a small saucepan. Bring to a simmer. Stir often for about 8-10 minutes. Turn off heat and add in stevia drops and vanilla extract. Serve with more shredded coconut on top!
