Samoa Bars
No bake Samoa bars are the perfect summer treat! All the wonderful flavors of traditional Samoa's without the sugars, gluten or dairy!!
Ingredients
Shortbread Ingredients
- 1 cup shredded unsweetened coconut
- 1 cup almond flour
- 3 tbsp maple syrup
- 1/3 cup coconut oil melted
- 1/4 tsp salt
Caramel Filling
- 1/3 cup maple syrup
- 3 tbsp coconut oil melted
- 1/2-1 cup shredded unsweetened coconut depending on how runny or thick you want the caramel to be add more or less coconut.
- 1 tsp vanilla extract
- 1/2 cup creamy peanut butter
- 1/4 tsp salt
Chocolate Topping
- 3 oz dark chocolate
- 1 tsp coconut oil
Instructions
- Line an 8×8 inch square pan with parchment paper. In a medium sized bowl mix shortbread ingredients. Press firmly into the bottom of the lined pan. Place in the freezer while you make caramel.
- In a small bowl combine filling ingredients. Spread evenly onto shortbread crust and return to freezer.
- Meanwhile, melt chocolate and stir in coconut oil until smooth. Drizzle on top of caramel filling! Return to freezer for about 10-15 minutes. Remove from freezer and cut into squares. Store in an airtight container in the fridge or freezer.
