Healthy Granola

This healthy granola recipe is not your typical granola with lots of oil and sugar. That’s why I love it because it full of fiber and protein and it’s made with healthy avocado oil!

I can live off of this stuff and my kids love it too! It’s one of those snacks that fill you up and you don’t feel guilty eating it! Your house will smell amazing with the aroma of cinnamon while this is baking. Every time I make this my kids or my husband walk in the house and think I’m making cinnamon rolls or some kind of sweet treat! They’re always a little disappointed when I say, “no, it’s just granola” but then they start eating it and can’t stop!

Gluten Free of course!

We love the granola on top of yogurt, with almond milk in a bowl, or by the handful. I first got the recipe from my mother in law about 10 years ago. Since then I’ve tweaked it a little to make it my own. It’s very versatile. If you like dried fruit add that in the end or shredded coconut and whichever nuts and seeds you prefer. I keep it simple because that’s the way my family likes it!

We ike it on the crunchy side. So I bake it until it’s a nice brown color and with some dark brown. When it cools it has a nice crunch. If you like it chewy, just bake it until it’s golden brown.

Ingredients:

  • 6 cups Gluten Free old fashion oats or regular
  • 1/2 cup ground flaxseed
  • 1/4 cup chia seeds
  • 1 cup chopped almonds
  • 1 tablespoon of cinnamon
  • 2 teaspoons vanilla extract
  • 3 egg whites
  • 1/3 cup avacado oil or light olive oil
  • 3/4 cup honey or maple syrup
  • 1/4 teaspoon pink Himalayan salt or whatever you have

Line two baking sheets with parchment paper. Preheat the oven to 350 degrees F.

Stir together the oats, ground flaxseed, chia seeds, chopped almonds and cinnamon in a large bowl. Set aside.

Next, whisk together the egg whites and salt until frothy. Then mix in the avacado oil, honey, and vanilla extract. Once that’s all mixed well pour it on top of the oat mixture and stir to coat. Divide amongst the two baking sheets. Flatten it a bit and break it up a little to roughly resemble the size you will want it. After ten minutes of baking you will be able to break it up more. Bake it at 350 degrees F for ten minutes then you will flip the granola and crumble it more. Bake for an additional 15-20 minutes depending on how crunchy you want it. Enjoy the energy!
