Jump to RecipeThese cookies are special. They are sweet and buttery. They remind me of a special tea cookie or for a special occasion.
I recently made them with my daughter for the other half of our family that had been out of town for six days without us! We always go on trips together. Most of our trips are all based around motocross but, we all love to support our two kids that race! Plus, the fun places it takes us! This was an exception though, my mother’s health was not well and we had this trip for a big race planned for months, that being said they went and we stayed and missed them so much we welcomed them home with these delicate cookies!
They were surprised and so happy to see us, but even more excited that they had there own special cookies! This batch really doesn’t make much. It made about 12-14 cookies. I will double the batch next time. Our family keeps getting bigger and eating more every time I make these!
I made these gluten and dairy free because that’s the way we eat, but they can easily be made with regular all purpose flour and regular butter. Either way you make them they will be delicious!

Jam Filled Cookies
Ingredients
- ¾ cup Butter or a dairy free "butter" I use Earth Balance
- ½ cup Powdered Sugar
- 2 Egg yolks
- 1 tsp Vanilla extract or almond extract
- 1½ cups Gluten free flour blend check out my easy gluten free flour blend!
- 1 cup Jam of your choice
Instructions
- Preheat the oven to 325°
- In a medium sized bowl cream butter with an electric mixer. Add sugar and mix. Add egg yolks and extract. Beat at medium speed till fluffy. Add flour and blend slowly.
- Form dough into disc wrapped in plastic wrap and refrigerate for 1 hour.
- Lightly flour parchment paper and roll the dough with rolling pin to about ¼ in thick. using a biscuit cutter or a glass cut out little discs about 3 inches round. Place on a parchment lined baking sheet about 1 inch apart. Put about a teaspoon of jam in the center of half of the discs you cut out. Top with the other half. With a fork gently press the edges together to make a cute design. Bake for about 15 minutes or untill edges start to brown.
- Cool on wire rack then enjoy!
