These gluten and dairy free lemon bars are so so good! This is very similar to Martha Stewarts Lemon bars which I love! They can be made with gluten all purpose flour and diary if that’s what you do!
Now these lemon bars have a lovely lemon punch!
Lemon Bars
These lemon bars are full of real lemon flavor and have a tender buttery crust!
Ingredients
Crust
- 3/4 cup butter or vegan butter
- 1 ¾ cup flour or gluten free flour blend
- 3/4 cup powdered sugar
- 1/2 tsp salt
Filling
- 4 eggs
- 1 ⅓ cup sugar or sugar sub
- 3 tbsp flour or gluten free flour blend
- 1/4 tsp salt
- 3/4 cup fresh squeezed lemon juice
- 1/4 cup milk or vegan milk (creamier the better)
- 1 tsp lemon zest
- powdered sugar for dusting on top
Instructions
- Preheat oven t o 350°Grease and line a 13 by 9 inch baking pan with parchment paper.
Crust
- In a large bowl whisk together flour, powdered sugar, and salt. Grate cold butter with a cheese grater into the bowl with flour. Stir until crumbly. pour crust mixture into prepared pan. Press firmly and evenly into pan. Place in freezer for about 15 minutes. bake for about 20 minutes or until lightly golden.
Filling
- In another large bowl whisk together eggs, sugar, flour and salt. Stir in lemon juice, lemon zest, and milk. Pour over crust once crust is done baking. Reduce oven temp to 325° and bake about 18-20 minutes or until edges are lightly golden and middle is set.
- let cool completely before cutting into squares. Dust top with powdered sugar.
