Gluten and Dairy Free

This lemon loaf is so delicious and lightly flavored with real lemon flavor never artificial! Lemon loaf is lightly lemon flavored with a lemony icing drizzled on top!

This recipe is gluten and dairy free as all of my recipes are. That being said, I do only recommend my easy gluten free flour blend. Also, if you are not gluten free and dairy free please feel free to substitute the gluten free flour for all purpose flour and any milk or butter for real dairy!

Lemon loaf is great with cup of coffee or as a slightly sweet snack! It doesn’t call for a lot of lemons so if you are making lemonade, zest a couple of the lemons before you juice them and save a few tablespoons of the juice! That’s it not a lot of lemon needed!

Let’s Talk About Lemons For a Moment!

Don’t you wish you had a lemon tree? I do! I have gotten fresh lemons this spring from my mother in laws tree and a friend of mine gave me a bag full! So thankful for them sharing with me! If you have never had homegrown lemons they smell amazing and have smooth bright yellow skin! You don’t even have to peel them to smell the amazing fragrance they give off! One of these days I am getting a lemon tree and hopefully keeping it alive!

Something about lemons scream springtime to me! They make me feel so festive to this time of year! Spring is my favorite time of year with all the blooming flowers and green grass and lemons of course!

Here is the lemon loaf straight out of the oven! Not yet topped with the lemon glaze!

I like to add extra lemon zest on top of the glaze! Some zest is in the glaze, but adding extra on top of the lemon loaf makes it look so pretty!

I have noticed when baking in a loaf pan that if I use parchment paper the bottom doesn’t get quite as brown as when I only butter the pan and do not use parchment paper. Just a little tip I have noticed!

Lemon Loaf

This lemon loaf is lightly lemon flavored topped with a lemon glaze and it looks so pretty!

Ingredients
  

  • 1 ¾ cup gluten free flour blend I recommend my easy flour blend
  • ¾ cup sugar
  • 2 tsps baking powder
  • ¼ tsp salt
  • 1 egg
  • ¾ +1 tbsp cup milk of choice
  • ¼ cup avocado oil
  • 1 tbsp lemon zest
  • ¼ cup lemon juice

Lemon Glaze

  • ½ cup Powdered Sugar
  • 3 tbsp lemon juice
  • 1 tsp lemon zest

Instructions
 

  • Grease a loaf a 8 x 4 loaf pan and line with parchment paper (optional). Preheat oven to 350°
  • In a medium bowl stir together flour, sugar, baking powder, and salt. Make a well in the center of the bowl and set aside.
  • In another medium bowl mix the egg, oil, lemon zest, lemon juice, and milk. Add the lemon mixture to the flour bowl and combine. Do not over mix. Pour batter into loaf pan and bake for 40-50 minutes.

Lemon Glaze

  • Mix powdered sugar, lemon juice, and lemon zest in a small bowl. After lemon loaf is out of the oven pour on loaf while in pan and let cool.

If you want to add 1 tablespoon of poppyseeds you can have lemon poppyseed bread!
