Most Delicious Chocolate Cake

This recipe is gluten and dairy free, but you can easily sub in all purpose flour and dairy products accordingly!

When I bake this cake people who think they don’t like gluten free foods cannot even tell that the cake they’re eating is gluten and dairy free! They’re always amazed! Although it is becoming more and more common these days and people are realizing that it can be just as delicious or even better then traditional gluten and dairy foods, baked goods especially!

Make Sure You Level Your Cake Correctly!

In the picture below you can see that I did not do a good job leveling my cake! As most of you know when you are making layered cakes you cut the top of each cake layer once it is cooled with a serrated knife. You do this so the cake is level and has a smooth top. I forgot to put the cut side down and have the smooth side up. So you can see in this picture that the frosting attached itself to the cut part of the cake. With the craziness of four kids running in and out of my kitchen I get in a hurry and this stuff happens sometimes! lol

Regardless of the imperfections in the appearance of this cake my family loved it and it was a hit as usual!

This time I made this cake in memory of my late mother. April 30, 2020 was our first time celebrating her birthday without her with us physically. We definitely felt her love and spirit though! She loved chocolate cake, so it seemed appropriate!

I only recommend using my easy gluten free flour blend. You can find that here. Some 1 to 1 gluten free flour blends really change the texture of baked goods. That is why I only recommend what I know for sure!

Also, in this recipe I make my own dairy free buttermilk with usually almond milk or any other milk I have on hand and apple cider vinegar. I usually add 1 tablespoon of ACV to 1 cup of dairy free milk. The ACV also works as a tenderizer to the flour!

Most Delicious Chocolate Cake

This is the most delicious chocolate cake! It is moist and tender without being heavy and the frosting is smooth and creamy.

Ingredients
  

  • 2 cups gluten free flour blend
  • 2 cups sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup vegan butter, dairy free butter or butter
  • cup unsweetened cocoa powder
  • 2 eggs
  • ½ cup dairy free buttermilk, I use homemade DF
  • tsp pure vanilla extract

Chocolate frosting

  • ¼ cup vegan butter, margarine, or real butter
  • 3 tbsp cocoa powder
  • 3 tbsp dairy free buttermilk
  • cups sifted powdered sugar
  • ½ tsp pure vanilla extract

Instructions
 

  • Preheat oven to 350° and grease and line bottoms of baking pans and line with parchment paper and grease again. I use two 8" circle cake pans.
  • In a medium bowl stir together flour, sugar, baking soda, and salt. Set aside.
  • In a medium saucepan combine butter, cocoa powder, and 1 cup water. Bring mixture just to a boil and stir constantly. Remove from heat. Add the melted cocoa mixture to the flour mixture and beat on medium speed until thoroughly combined. Add eggs, buttermilk and vanilla and mix well.
  • Pour batter into prepared pans and bake for about 25-35 minutes.
  • Once cakes have cooled for about 10 minutes remove from pans and let cool another 10-15 minutes. Level cake accordingly and frost.

Frosting

  • In a medium saucepan combine the butter, cocoa powder, and buttermilk. Bring to a boil and remove from heat. add in the powdered sugar and vanilla. Beat until smooth.
  • This frosting does best when applied to cake while still warm. It gives a shiny gleam!
