These hardy oatmeal cookies are my favorite. They’re almost the exact same as Martha Stewarts oatmeal cookie recipe. The only difference is that I substitute wheat germ for ground flaxseed and use vegan butter!
This is a healthful oatmeal cookie if you will! Yes, it has sugar and vegan butter, but considering the original oatmeal cookie this one is tasty and healthier! I also add vegan dark chocolate chips! I love the dark chocolate chips because it pairs well with the sweet oatmeal cookie!
Old fashion oats are my favorite to use because they are chewy and less processed than quick cooking oats. I only buy old fashion oats and I choose gluten free.

Oatmeal Cookies
Ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup vegan butter or butter
- 2 eggs
- 1 tsp vanilla extract
- 1 cup +2 Tbs Gluten free flour blend
- 3 cups old fashion gf oats
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup ground flaxseed
- 2 cups dark chocolate chips vegan or reg
Instructions
- Pre heat the oven to 350° Line a cookie sheet with parchment paper.Mix softened butter with sugar in an electric mixer. Add eggs and vanilla extract making sure to scrape the sides of the bowl.
- In another medium sized bowl combine oats, flour, baking soda, baking powder, salt, and ground flaxseed. Once mixed well, add to the butter mixture. Stir in chocolate chips.
- Using a small ice cream scooper, scoop spoonfuls of cookie dough onto parchment lined cookie sheets. Bake for 15 minutes or until golden.
