Oh my goodness, Oatmeal Peanut Butter Cookies are so soft in the center and chewy on the outside! This is a match made for me! I love oats and peanut butter!
Typically, I add chocolate chips to most baked goods, but these have such a yummy texture I recommend holding back and not adding them! At least to the first batch!
I make these gluten and dairy free. I use gluten free oats and my go to easy gluten free flour blend, you find it here. I only recommend my easy blend. Not all gluten free flours are the same and it can change the texture of what you’re making! I also use a vegan butter. Feel free to use all purpose flour and real butter if you’re not gluten and dairy free! Either way these will taste amazing!
These cookies went too fast in my house! I recommend doubling this recipe if you have a big family!

OatmealPeanut Butter Cookies
Ingredients
- 1/2 cup butter (vegan optional) room temp
- 1/2 cup crunchy peanut butter
- 1 egg
- 1/2 cup brown sugar
- 1/3 cup white sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 3/4 cup gluten free flour blend or all purpose flour
- 3/4 tsp baking soda
- 1 ¼ cups old fashion oats
Instructions
- Preheat oven to 350°
- Line a baking sheet with parchment paper.
- Blend butter, sugars, salt, egg, and peanut butter until smooth. Add flour blend, oats, and baking powder. Stir well without overmixing. Bake 10-12 minutes or until still soft in the middle and light brown on edges. Let cool all the way if you take them out while still soft in the center.
