Peanut Butter Swirl Banana Bread

This flavor combo is a classic. The peanut butter swirl takes this banana bread to another level with the decadence of peanut butter swirled throughout.

Ingredients
  

  • 2 cups gluten free flour blend
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup avocado oil or melted butter
  • 3/4 cup brown sugar or coconut sugar
  • 2 eggs
  • 2 1/3 cups mashed overripe bananas

Peanut Butter Swirl

  • 1/2 tsp vanilla extract
  • 3/4 cup peanut butter
  • 1/8 tsp salt
  • 2-3 tables. maple syrup or honey depending on how sweet you like it

Instructions
 

  • Preheat oven to 350°
    Line and grease a loaf pan.
    Mix all dry ingredients, flour, salt, & baking soda, set aside.
    In a large bowl mix eggs, oil, sugar, and bananas. Then stir in dry ingredients. Do not over mix.
    In a small bowl mix peanut butter swirl ingredients together.
    Fold into banana bread mixture being careful not to over mix it.
    Pour into lined loaf pan and bake for about 50 minutes or until center is set.
