These gluten, dairy, and refined sugar free Turtle Brownies are a much healthier version of the classic! Kids love them as well as adults. They hit that caramel, chocolate, and nutty flavor combo on a chewy crust! It is so good everyone will devour these, I promise!

Turtle Brownies

Ingredients
  

Brownie Bottom Layer

  • 1 1/2 cups raw walnuts
  • 1 1/2 cups raw almonds
  • 2 + 1/2 cup dates, packed
  • 1/2 cup cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Caramel Layer

  • 2 cups dates, packed
  • 2-4 tablespoons water, as needed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Toppings

  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips

Instructions
 

Brownie Layer

  • Add walnuts, almonds. pitted dates, and cocoa powder, salt, and vanilla extract to food processor. Process / pulse until sticky brownie dough forms.
    Line an 8×8 square baking dish with parchment paper. Use your hands to press the brownie dough evenly across the bottom of the dish. Set aside.

Caramel Layer

  • Add dates, vanilla extract, water, and salt to the food processor. process until smooth caramel like spread is formed.
    Spread the caramel across the brownie layer. Then add crushed pecans and gently press into the caramel. Next, add chocolate chips on top and gently press those into the pecans.
  • Freeze the turtle brownies for an hour. After, slice and serve. Store in the refrigerator in an airtight container.
