Vegan Caramel

This vegan caramel is so amazing! It is made from dates and has no coconut anything in it! I do like coconut based vegan caramels, but when you don’t eat dairy you can tired of everything having a coconut flavor. That’s why I was so excited when I came up with this recipe!!

If you can eat dairy this is still a great option for you! This vegan caramel is so much healthier than traditional caramel made from heavy cream and loads of sugar! Once you taste this you will love it! It is so good!

Not only is this caramel so delicious, but it is so easy to make!

Vegan caramel with no coocnut flavor!

First off, you need a high pressure blender of some sorts or a food processor. I used a Nutri Bullet.

Measure out your one cup of dates and add to the blender. Also add in the melted vegan butter, almond or dairy free milk of your choice, maple syrup, salt, and vanilla extract. Then blend until it is very smooth. So easy!

The possibilities are endless with this vegan caramel! You could top ice cream, add it to brownies, cookies, or in homemade popsicles! I recently made a vanilla yogurt popsicle with this vegan caramel in the middle and dipped in dark chocolate! So good!

My son will be so happy! If you have a dairy free kid then you understand how hard it can be for them! They feel like they’re missing out and he hates everything to taste like coconut! I am so grateful to this recipe!

If you want this vegan caramel to be runnier then use it while it’s warm as it cools it gets thicker. It will keep in an airtight container in the fridge for several days. It can be reheated to use as a sauce.

Make A Peanut Butter Caramel Dip!

Add 1/4 cup peanut butter to the caramel after you have blended it and you have a delicious peanut butter caramel dip or spread! Perfect to dip apples in or spread on your favorite banana bread! With no sugar you can feel good about letting your kids dig in!

Equipment

  • High pressure blender or food processor

Ingredients
  

  • 1 cup dates
  • cup melted vegan butter
  • ¼ cup maple syrup
  • 4-5 tbsp dairy free milk
  • ½ tsp pure vanilla extract
  • ¼ tsp salt

Instructions
 

  • Place ingredients into a high pressure blender or food processor and blend until smooth.
