This vegan strawberry ice cream is a delicious healthy treat! I’ve been hearing people call I’ve cream that doesn’t have sugar and it’s terrible for you, “nice cream”! That is how I feel about this!
No ice cream maker is needed!
With a cashew base it’s full of nutrients! I did add a few tablespoons of sugar to the chopped of strawberries. So this recipe does have a tiny amount of sugar. You could easily swap out the sugar that helps sweetens up the strawberries with a natural sweetener like Agave or stevia!

This ice cream gets creamiest after sitting for about 5-10 minutes! I recommend you let it sit before you dig in! It’s worth the wait!
The Simple Process Of Making The Ice Cream
First off you start by soaking two cups of raw cashews in two cups of water. They should soak for about 4 hours or longer. Soaking them overnight on the counter ensure a very creamy texture!
After soaking the cashews, place them in a high pressure blender with the water they were soaked in. I used a Nutribullet and puréed it in two steps so I would t overfill the blender.
You will want to make sure you puree the cashews until they are very smooth. You don’t want there to be any chunks of cashews.
Next, you simply stir in maple syrup or honey, vanilla extract, and salt. Set aside after you mixed it well.
Finally, stir in the strawberries to the vanilla cashew mixture. Place in a freezer safe container and cover. Freeze until frozen all the way through.
Now the fun part! Scooping a bowl full of ice cream!
This is the perfect summertime treat! When the strawberries are bursting with flavor and are at the peek of ripeness!
Remember, to let it sit for 5-10 minutes before digging in for the most creaminess experience!
My kids loved this ice cream! They all said it was better them dairy, although only one of them actually knows what the dairy version tastes like! lol

- 2-4 tbsp sugar
- ⅓ cup maple syrup, honey, or agave
- 3 tsp vanilla extract
- ½ tsp salt
Instructions
- First start with soaking the cashews in water. Soak for at least 4 hours. Overnight ensures a very smooth texture.
- Once soak, puree cashews and water they were soaked in, in a high pressure blender. You may need to divide in half and blend half at a time. Transfer into a large bowl.
- In a small bowl mash strawberries with sugar. Depending on how sweet you want the strawberries, use anywhere from 2-4 tbsp of sugar. Mash with a fork or pastry blender until desired consistency.
- In cashew puree stoir in vanilla, salt, and sweetner of choice. Mix well. Add in strawberries and stir. Place in freezer safe container and cover.
- Let freeze all the way through. Best served after it has set out at room temperature for 5-10 minutes.
