Is there anything better than a warm chocolate chip cookie? Yes, a cold one! (lol) I actually prefer my chocolate chip cookies cold because then the chocolate chips are kinda crunchy and melt in your mouth! Yummm…
This is just a traditional chocolate chip cookie recipe. I didn’t add nuts to this because I was just in the mood for a soft cookie and chocolate chips, but you can very easily add your favorite nuts if you want a chunkier, crunchy cookie!
Chocolate Chip Cookies
Ingredients
- 2 1/2 cups Gluten free all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup white sugar
- 1 cup dark brown sugar firmly packed
- 1 cup earth balance softened
- 2 large eggs
- 2 tsp pure vanilla extract
- 2 cups chocolate chips
Instructions
- Preheat oven to 350*In a medium bowl combine flour, baking soda, and salt. Mix well with a whisk. Set aside.
- In a large bowl or stand mixer beat butter until fluffy. Add sugars and mix making sure to scrape down the sides of the bowl. Add eggs and vanilla extract. Mix just until combined. Add the flour mixture and chocolate chips being careful not to over mix.
- Drop by rouded tablespoonfulls onto a parchment lined baking sheet. Bake for 8-12 minutes depending on how big or small your cookies are.
If you want to add 3/4 cup of nuts that would be great too! In this recipe I used my go to easy gluten free flour blend which you can find here. I also love Enjoy Life chocolate chips! I used the dark chocolate chips in this recipe.
If you are not gluten and dairy free you can simply replace the flour and Earth Balance with your all purpose flour and dairy butter!
