PB + Jelly Bars

So quick to whip up and no baking involved! These are so good with your favorite jelly and berries! Love having these in the fridge for a sweet snack on summer days.

Ingredients
  

  • 1 cup dates pitted
  • 2 3/4 cup gluten free rolled oats
  • 1/2 cup peanut butter
  • 2-3 Tbs. maple syrup
  • 1/2 tsp. salt
  • 4-6 oz jelly or jam
  • 1 tsp vanilla extract
  • berries for topping

Instructions
 

  • If dates aren't soft cover them with hot water and let sit for 5 minutes then drain.
  • Place oats in a food processor and pulverize until you have a medium-fine oat flour.
  • Add dates, peanut butter, maple syrup, vanilla, and salt to the oat flour in the food processor.
  • Pulse until mixture forms into a sticky dough. If it feels too dry add a spoonful of nut nilk.
  • Press oat mixture into a parchment lined loaf pan. Place in freezer for about a half an hour. Remove from freezer add jam of choice to the pressed oat mixture. Top with berries and return to freezer for an additional half an hour or longer. cut into bars and keep in freezer or fridge.
