Who doesn’t love pumpkin everything in the fall? Its so fun and festive! I made these delicious pumpkin donuts gluten free, dairy free, and soy free for the family and they loved them so much!
To make them a little healthier I chose to fry them in avocado oil rather than canola or a vegetable oil. Also, you could replace all or some of the sugar with sweet monk fruit, but this time I used all regular sugar and it sure was a festive homemade treat.
You could probably spray these with avocado oil and air fry them. I haven’t messed around with that at all yet so I’m not sure, but sounds possible.
For this recipe inpeticular, I Used 3 1/2 cups gluten free flour blend (1 to 1, store bought) and 1 cup almond flour. I never will use all 1 to 1 gluten free flour because it thickens too much in my opinion.
I don’t have a donut cutter so I use a biscuit cutter and a core remover to remove the holes in the center. This worked great!
Pumpkin Donuts
Ingredients
- 4 ½ cups gluten free flour blend-see above for my exact blend or all purpose
- ½ cup sugar
- ½ cup brown sugar
- 6 tbsp softened vegan butter or real butter
- 2 eggs room temp
- 1 tsp salt
- 1 tbsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 tsp pumpkin pie spice
- 1 cup pumpkin puree
- ½ cup vegan buttermilk homemade or traditional
- 1 tsp vanilla extract
Topping
- 1½ cups sugar
- 3 tbsp cinnamon
- 1 tsp ground nutmeg
Instructions
Donuts
- To begin add about 3 inches of oil, I use avocado oil, to a sauce pan or fry pan and set on medium high heat. You can use a thermometer, I just eyeball this. The temperature should be around 375°.
- In a large mixingbowl cream together the butter, sugar, and brown sugar. Add eggs one at a time and vanilla extract.
- In a medium bowl sift together flour, baking powder, baking soda, and salt.
- Add the pumpkin ,cinnamon, and pumpkin pie spice to the butter mixture.
- Now, add the buttermilk and flour mixture alternating until it is all combined.
- Turn the dough onto a floured work surface. Pat out the dough to ½-¾ of an inch thick. Using a donut cutter or a biscuit cutter 2-3" width cut out the donuts!
- Once the oil is hot enough test it with a small peice of dough. It should bubble and fry immediatley when the dough hits the oil.
- Fry for a few minutes on the first side and a couple minutes and the last side. Don't over crowd the frying pan. Remove donuts and place on paper towels to absorb excess oil then coat in topping mixture.
Topping
- mix all 3 ingredients in a bowl big enough to coat donuts in.
