I only recommend my go to easy gluten free flour blend. I have seen too many gluten free baked goods not come out right due to using the wrong type of gluten free flour or all of a 1 to 1 blend. For my easy recipe click here.
Toppings
Topping the muffins before they go in the oven ensures them to stick to muffins and adds a little bit of flavor!
Lastly, the fun part of this great sourdough discard chocolate chip recipe is the topping of the muffins! You can save some of the chocolate chips to put on top or a slice of fruit! I have added a 1/2 of a teaspoon of peanut butter to the tops of the muffins and it was delicious! The peanut butter does some what take over the sourdough flavor in the muffins though, but if you’re a peanut butter lover that might just be amazing! Other fun topping ideas is coconut flakes, ground flaxseed, chopped nuts, or just plain!
