The Best Zucchini Bread

This moist zucchini bread is exceptionally moist from yogurt! All the goodness of traditional zucchini bread, but better!
Servings 1 loaf

Ingredients
  

  • 1 ½ cups Gluten free flour blend
  • ½ cup sugar
  • 1 egg
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ¼ cup shredded zucchini
  • 1 ½ tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ cup unsweetend vegan yogurt
  • cup avocado oil

Instructions
 

  • Start by pregeating your oven to 350°
    Butter and line a loaf pan with parchment paper.
  • In a medium sized bowl combine all your dry ingredients. Mix with a swisk. In another medium sized bowl mix egg, sugar, oil, yogurt, vanilla, and zucchini.
  • Next, add wet ingredients to the dry ingredients. Blend until just combined being carful not to overmix. Pour in loag pan and bake for about an hour or until center is set. Let cool completley before cutting.
