Creamy Vegan Rice Pudding

This creamy vegan rice pudding has been so cozy as the weather slightly cools the smallest bit in the evenings and mornings. I guess I’m getting ready for fall and cozy foods! It can be made with sugar or with maple syrup! It’s so creamy and delicious!

The type of milk and cream you use makes a difference in the texture. I prefer a can of “simple” coconut milk with no guar gum. For the rest of the milk measurement I use a creamy homemade almond milk or Simply Almond original almond milk. For the finisher, 1/4 of cream, I love Silk’s heavy whipping cream! It is soy free and so thick and creamy!

Another thing to consider is which type of rice to use. Arborio rice is great for rice pudding because it has high starch content. I replaced arborio rice with sushi rice and it worked really well! Although, I’ve seen recipes for rice pudding using any time of white rice.

The rice pudding pictured above is slightly thicker and more dry because I tried it with a half cup less milk. It was fantastic immediately, but once it cooled it thickened up a bit too much. It’s all personal preference though. Just keep in mind that as it cools it will thicken. You can refrigerate it and eat it cold or warm.

Creamy Vegan Rice Pudding

This classic comfort food is sure to please everyone! It is so creamy and satisfying.

Ingredients
  

  • 4 cups milk alternative I prefer 1 can "simple" coconut milk & almond milk
  • 2 tbsp vegan butter
  • 1/3 cup maple syrup or sugar
  • 1/2 cup starchy rice arborio or sushi rice
  • 1/4 tsp salt
  • 1 tsp cinnamon more for topping
  • 2 tbsp vanilla extract
  • 1/2 cup raisins (optional)
  • 1/4 cup vegan heavy cream or similar texture

Instructions
 

  • In a large pot or dutch oven melt butter. Add rice, milk, sugar, salt, raisins if using and cinnamon, stir well. Bring to a simmer stirring often. Let simmer for 30 minutes while stirring. It should thicken up and rice should be tender. Add vanilla extract and stir in heavy cream. Top with more cinnamon. Let cool and serve or refrigerate.
