Mini Star Pies

Wondering what patriotic dessert to make for the Fourth of July? These mini star pies are perfect! Is there anything more American than an apple pie with summer blackberries? Probably, but this is close!

These mini pies are filled with apple pie filling and blackberries! The red color comes from the blackberry juice, the blue is from the blackberries, and the white is from the pie crust! You could also top these once your ready to serve with a mini dollop of whip cream and a berry!

Ingredients

For this recipe I used my last jar of homemade apple pie filling. Last summer I made apple pie filling from our apples grown in our yard and caned it! It was the best thing I have ever done with apples! All winter I easily made a homemade apple pie with homegrown organic apples!

I picked one cup of blackberries from our yard to pair with the apples. Since the apple pie filling was already sweetened and flavored well, it didn’t take a lot to prepare the blackberries for the pies!

Organic blackberries freshly picked are the best.

As always, I can only recommend my easy gluten free flour blend for all my recipes. I know how this blend works and will turn out. Not all gluten free flours are the same and this affects the texture.

Homemade pie crust is the best as we all know! It really is quick and simple to throw together! Gluten and dairy free pie crust can be difficult to say the least. Especially if you want it to look pretty. Cutting the crusts out with a large biscuit cutter really makes the pie crusts manageable! Then you simply press it into a buttered muffin tin cup.

Assembling Is The Fun Part

To begin, you make the pie crust and place it in the refrigerator for at least a half an hour or longer. Then, you can roll the dough on a lightly floured surface to about 1/6-1/4 inch thick. Using a large biscuit cutter or the top of a large glass cut out circles of dough.

In a buttered muffin tin place the pie dough you cut out and press down into the tin. Press up on the side as well. It won’t reach the top of the sides, but if you need to add a little more dough to the tin to make it higher on the sides do so.

After molding the pie crusts, stick muffin tin into freezer while you cutout stars from the rest of the dough.

Meanwhile, toss blackberries with a teaspoon of each, sugar, flour, and lemon juice. Let sit until ready to use.

Next, take out muffin tin from freezer. Scoop out the pie filling with a heaping cookie scoop, about 1 1/2 in, and place into the pie crusts.

Once all the pies are filled with the apple pie filling, put about 3 coated blackberries into each mini pie. Then top with the star cutout!

Finally, brush the tops of the pies with dairy free milk if vegan or dairy free, or egg wash! Sprinkle with sugar and bake!

Mini Star Pies

These mini pies are great for the Fourth of July! They are gluten free and vegan so everyone can enjoy this summer treat!
Servings 12

Equipment

  • Muffin tin

Ingredients
  

Filling

  • 2 cups prepared apple pie filling
  • 1 cup heaping blackberries
  • 1 tsp lemon juice
  • 1 tsp sugar
  • 1 tsp flour

Mini Star Pie Crust

  • 2 ¼ cups gluten free flour blend
  • ¾ tsp salt
  • cup cold vegan butter or reg butter
  • 8-10 tbsp cold water

Topping

  • 2 tbsp sugar
  • 2-3 tbsp dairy free milk or egg wash egg wash: 1 egg stirred with a splash of milk

Instructions
 

  • Preheat oven to 375°
  • Generously butter muffin tin cups. Set aside.

Preparing The Crusts

  • Stir together the flour and salt in a medium sized bowl. Using a pastry cutter cut in the butter until it resembles small crumbles. Then add in water until it forms a ball. More moist dough is better then dry crumbly dough! Wrap in plastic wrap and refrigerate for a half an hour or longer.

Preparing Filling

  • Coat blackberries in small bowl with sugar, lemon juice, and flour. Set aside.
  • Roll out dough on a lightly floured suface to about 1/6-1/4 inch thick. Cut out circles with a large biscuit cutter or a large glass. Then press circles into muffin tin and halfway up the sides. With remaing dough cutout stars.

Assembling

  • Next, with a cookie scooper, about 1 1/2 inches, scoop up heaping spoonfuls of apple pie filling. Place into pie crusts. Add in about 3 coated blackberries to each pie. Top with star crust. Brush with egg wash or dairy free milk and sprinkle with sugar!
  • Bake for 15-22 minutes let cool and gently remove pies!
